These are delicious! Make it into a full cake, a layer cake, or into cupcakes (like I did).
Ingredients:
-2 cups all-purpose spelt flour (or as finely ground as possible)
-1 cup sugar
-2 tsp baking powder
-dash of salt
-1/2 cup butter
-2 eggs
-1/2 cup Sambuca or other aniseed liqueur and milk (if you want the flavour stronger, use all Sambuca. If you want it more subtle, add less and put milk in its place).
-1 tsp vanilla
-1-2 tbsp aniseed
-1/2 tsp cinnamon
-1/2 tsp ground cloves
Frosting: buttercream of choice, with Sambuca subbed in fit some of the liquid.
Directions:
Preheat oven to 375*F/180*C.
Mix together flour, sugar, baking powder, and salt. Cut in butter with a pastry cutter or two knives. Blend in eggs, one at a time, with a hand blender. Mix in liqueur and spices.
Pour into pan, and bake for 20 minutes, or until it’s golden on top. Let cool, then frost.
Makes one small cake, or 12 cupcakes. For a layer cake, double recipe.
