Recipe: Artichoke Dip

I make this dip for parties (either to bring to other people’s parties or my own) and it’s become a favorite of my friends and family.  I’m always being asked for the recipe, so I thought I’d post it here once and for all for future reference.  Then it saves me from having to type it out every time I get asked for it 🙂

Artichoke Dip

  • 1 can artichoke hearts, drained
  • 1 package plain cream cheese (either light or regular…doesn’t matter!)
  • parmesan, about 1/2 cup grated (but must be real parm, not that powdered stuff), but the amount is not really important
  • 2-3 garlic cloves, crushed
  • salt and pepper

Blend all ingredients in a blender, or with a hand blender.  Put in an oven-safe dish and bake at 180 degrees celcius (375 F) for about 30 minutes or until golden brown on top.  Serve warm with tortilla chips, bread or crackers.

You can also build on this.  Sometimes I add spinach, and crab also tastes good!
